High Protein Breakfast Tacos

I enjoy hot breakfasts in the morning but I do not have the time for a gourmet meal. This recipe is very quick and super satisfying. It’s jam packed with protein so it will be leaving you feeling full all morning. To help make this a more balance meal, serve it with some fresh fruit.

For those interested in cycle syncing: This is full of nourishing ingredients so it’s perfect for all cycle phases. To help it be more nourishing, feel free to add some fresh greens and serve it with cycle supporting fruits.

High Protein Breakfast Tacos

This is a delicious and easy breakfast that is guaranteed to leave you feeling full and energized all morning or until your morning snack.

Equipment

  • 1 Nonstick Pan
  • 1 Spatula
  • 1 Paring Knife
  • 1 Cutting Board
  • 1 Small Mixing Bowl
  • 1 Whisk or Fork

Ingredients
  

  • 2 Tortillas Gluten Free if desired (Siete Brand is excellent)
  • Drizzle Olive Oil
  • 10 Cherry Tomatoes Halved
  • Pinch Salt & Pepper
  • 2 Eggs
  • 1/2 cup Cottage Cheese Full Fat
  • 1/2 Avocado Or one container of smashed avocados from Costco

Instructions
 

  • Whisk together eggs, cottage cheese, and a pinch of each salt and pepper. Set aside.
  • Heat non-stick pan.
  • Heat the tortillas on both sides until starting to crisp up.
  • Add olive oil to pan and heat to medium low.
  • Add halved cherry tomatoes to heated oil & top with a pinch of each salt and pepper.
  • Sauté tomatoes for about 2-3 minutes until starting to shine, then set aside
  • Add the egg mixture to pan and cook for about 5 minutes, until eggs appear fully cooked.
  • Assemble tacos!! Add smashed avocado on heated tortilla, then top with sautéed tomatoes. Lastly, add scrambled eggs
